I love baked potatoes, complete with butter, sour cream, salt and pepper. Here’s a version I adapted from a technique I saw Alton Brown do on Good Eats, one of many things I’ve learned from that show.
- Preheat oven to 425.
- Wash potatoes and prick them deeply all over with a paring knife.
- Roll them in extra virgin olive oil.
- Place in oven directly on rack.
- Bake for 30 minutes and then flip over.
- Bake for an additional 30 minutes until crisp and golden.
